Corona virus anxiety has been marinating in my system for weeks at this point.
The kind the sits just in your throat and within your chest, waiting to turn into panic at a moments notice. The feeling that you know something bad will happen, but you don’t know when and you don’t know how bad, and maybe if you watch enough crappy TV the feeling will go away.
And then yesterday, I got some actual, real, sad news. The kind that punches you in the spot just below your ribcage. The kind you can’t wish away. I sat with that news last night, too tired to stay anxious and too sad to make a frenetic plan for the future.
Waking up to this grey morning, I’m attempting to pull myself out of it. I’d been wishing away the possibility of canceling travel plans or changing my life in any significant way. Forgetting that sad and life altering things can happen to us or others at any time – corona induced or not.
What I want to be doing instead, is taking stock of all that I have right now. Turn sorrow and anxiety into action around how I want to live life today, even with restriction.
Work out, because I have a body that still lets me.
Cook and eat food, because it’s still my favorite thing to do.
Call friends/family and stay in their lives, because close relationships matter.
Play with Rayna, because dogs have no idea what’s going on and I love her for that.
Laugh and make jokes because sometimes it’s all we can do to stay sane.
I made these Strawberry Collagen Truffles a week ago. I’d like to say I still have some in the fridge but that would be a lie. They are a not-so-sweet dessert that includes a decadent duo of strawberry and chocolate.
What is Collagen? You can buy it in powder form at your local grocery store or on Amazon – it’s meant to improve your skin, hair, heart, joints, and has lots of great health claims. It will also cost the same as your left arm, so if you don’t want to spend the money (or believe the hype) you can sub in your fave protein powder or just more coconut flour.
I’m trying to look young forever and also eat dessert so these made a lot of sense. Eat them while you work from home or deliver them to loved ones as you check in on them.

Strawberry Collagen Truffles
(start making 30 minutes before you want Strawberry Collagen Truffles)
2 cups strawberries
1 cup freeze dried strawberries
1 cup coconut flour
1/4 cup collagen powder (or protein powder or coconut flour)
1 cup dark chocolate chips
1 Tbsp coconut oil
Blend both fresh and freeze dried strawberries for a few moments until completely liquified. Mix into a bowl with coconut flour and collagen powder. Roll into 12 balls and lay onto a parchment lined pan. Stick these in the fridge for 15 minutes to harden up.
Then melt chocolate chips and coconut oil in a bowl (microwave works) until completely melted. Coat the balls with chocolate, using two forks. Then lay them back on the parchment paper. If you want, take extra freeze dried strawberry dust and sprinkle it over the top. Stick them back in the fridge until ready to eat.
