There’s this old mansion in the Potter Highlands neighborhood of Denver. The mansion has some of the oldest history in Denver, which includes but is not limited to: murder, magic and ghosts.

It serves as an inn today, where they host dinner parties, high tea and overnight guests on a regular basis.

I went a few months ago with some friends to share high tea and get our tarot cards read. Getting your cards read in a haunted mansion gives you that feeling of playing with a ouija board as a kid in your basement.

Corona virus anxiety has been marinating in my system for weeks at this point.

The kind the sits just in your throat and within your chest, waiting to turn into panic at a moments notice. The feeling that you know something bad will happen, but you don’t know when and you don’t know how bad, and maybe if you watch enough crappy TV the feeling will go away.

Dinner inspiration has been lacking as of late.

Desperate for a farmer’s market to tell me what to eat, I’ve been searching all over the internet for foods that are satisfying yet light. Year-round farmers markets are what I miss most about living in California.

I’ve been extra conscious about trying to eat whole foods that don’t require a complicated recipe or processing to make them taste good.

Sweet potatoes are a staple at my house.

As I get older, I find it takes more work to create real friendships. Casual acquaintances come easy but lasting friendships seem challenging to build at this stage in my life.

In my 20’s, friendships felt so simple. We were young, single and we shared everything together.

We knew who each other was dating or texting, who we hated at work, what clothes we wanted to steal from each other and our favorite spots to meet up for drinks on the weekends. If someone wanted to go out – it was a no brainer – you went out! duh, what else would you be doing?

I read somewhere that the average family spends $6,000 around the holiday season. Everywhere you look there’s a sale and or person telling you to buy more, have more, give more.

It’s been a minute, friends. But here we are at the end of Italian month(s) and if you thought the cooking has slowed down, well you’d be wrong.

I’ve been cooking with excitement and fury, trying to get it all in before the end of the year. Only to realize, I have 9 recipes to share, and well, zero blog posts to show for it.

Rather than give you the dog and pony of why my life has gotten in the way of blogging, I’ll just say that I still have insane energy and love going into this blog. But it will change in the new year.

My friend Anna got married this summer and Anna’s taste is well…perfection. Not only was her wedding well designed and beautiful but even her bachelorette weekend was classy.

Well, I should say the location was classy (Hamptons). We the guests, were not (believe we went through 8 cases of White Claw that weekend).

A few of us spent the night before in NYC. We had an intimate dinner at the most amazing Italian restaurant, Supper, in the East Village.

Eggplant Parmesan

I’m a little nervous about Italian month.

I know the ingredients are paramount. The dishes are simple, and rely on high quality ingredients – if I can’t find those ingredients, will the food even taste all that great?

I also know that most of what you find in Italian food is inauthentic. Jarred tomato sauce, mozzarella and herb mixes. How will I know if the recipes I find are the real deal?
